Self Filled Cupcakes
Here is a easy to do self filled cupcake. I love filled cupcakes but hated the idea of having to use a pastry bag and then be very careful to not overfill the cupcake. With this recipe, that is a thing of the past. The filling cooks right along with the batter.
8 oz cream cheese, softened
1/3 cup sugar
6 oz or 1 cup semi sweet chocolate chips
1 vanilla or butter flavored cake mix
Cream sugar and cream cheese. Beat in egg. Stir in chocolate chips; set aside. Prepare cake mix according to package directions. Fill paper cups in muffin pan 2/3 cups full. Drop one rounded teaspoonful of cream cheese mixture into each cupcake. Bake according to package directions on cake mix. Cool on wire rack.
Ice cupcakes if desired.
Makes about 30 cupcakes.
