Easy Lasagna Pie
2 pounds ground beef
1 cup small curd creamed cottage cheese
1/2 cup grated parmesan cheese
3 cups shredded mozzarella cheese
1 1/2 teaspoons italian seasoning
1 15 oz can tomato paste
1 cup biscuit mix
2 cups milk
1/2 teaspoon pepper
Heat oven to 400 degrees F. Spray rectangular baking dish 13x9x2 with cooking spray. Cook beef in 12 inch skillet over medium high heat, sitrring occasionally, until brown; drain.
Layer cottage cheese and parmesan cheese in baking dish. Mix beef, 1 1/2 cups of the mozzarella cheese, the italian seasoning and tomato paste; spoon evenly over cheese in baking dish. Stir biscuit mix, milk, pepper and eggs until blended. Pour over beef mixture.
Bake uncovered 40 to 42 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 1/2 cups mozzarella cheese. Bake 1 to 2 minutes or until chesse is melted. Let stand 5 minutes before cutting. Sprinkle with parsley. 12 to 15 servings.
